Peabutter Bacon Truffles
1 Cup NoNuts Golden Peabutter*
9 Slices of bacon
2/3 Cup Icing Sugar
2/3 Cup Crisp Rice Cereal
*Remember you can substitute any flavour of NoNuts Peabutter in all our recipes.
2/3 Cup of Chocolate (chips or wafers)
Dice up bacon, very small (easier to do if partially frozen). Fry bacon until crispy, then remove bacon from pan, and reserve the fat.
In a medium bowl, add the Peabutter, add the bacon and stir well, add the icing sugar and cereal, add a few tablespoons of warm bacon grease. Blend well, and chill for 1 hour.
Once chilled, form the mixture into small balls. Chill again for about 30 minutes.
Melt the chocolate, either in the microwave on 50% power or in a double boiler.
You want the chocolate to be quite thin, as you will dip the truffles twice. You can add either some bacon grease, shortening or margarine to thin out the chocolate.
Using a toothpick, skewer the truffles and dip into the chocolate, make sure to coat the whole truffle. Place on a plate lined with plastic wrap or wax paper, let the chocolate harden before dipping again.
Chill until ready to serve.
Store in the fridge up to 3 days or in the freezer up to 1 month.
